Inspect & Chill

Keep the sushi-grade ahi tuna chilled until just before slicing. Pat dry with paper towels to remove surface moisture—dry fish slices hold seasoning and cuts more cleanly.

Season & Toast Seeds

Lightly sprinkle 1/2 tsp kosher salt over the tuna loin. In a small dry skillet over medium heat, warm black and white sesame seeds for about 1 minute until aromatic; let cool slightly.

Slice Tuna

Using a very sharp, long-bladed knife (preferably a sashimi knife), slice the tuna at a 45° angle into 8–10 slices about 1/4"–3/8" (6–9 mm) thick. Make a single smooth pull-through stroke per slice; avoid sawing. For nigiri, make slightly longer, narrower pieces; for sashimi, make broader rectangular slices.

Finish Tuna

Brush each slice very lightly with a drop of toasted sesame oil, then press the edges into the toasted sesame seeds if desired to create a seeded rim. Place a tiny dot (about 1/8 tsp) of wasabi on top of nigiri rice before laying tuna, or offer wasabi on the plate for sashimi. Garnish with microgreens or a thin strip of toasted nori on top of each slice as desired.

Rinse & Cook Rice

Rinse 1 cup short-grain sushi rice under cold water until the rinse water runs mostly clear (about 4–5 rinses). Drain 10–15 minutes. Combine rinsed rice and 1.1 cups water in a rice cooker or small saucepan; bring to a simmer, cover, and cook per appliance instructions (rice cooker) or simmer 12–14 minutes then rest 10 minutes off heat.

Make Sushi Vinegar & Season Rice

While rice cooks, warm 2 tbs rice vinegar, 1 tsp sugar, and 1/2 tsp salt in a small pan just until dissolved (do not boil). Transfer cooked rice to a wooden or nonreactive bowl and gently fold in the vinegar mixture with a rice paddle or spatula using cutting motions so you don’t crush grains. Fan rice as you fold to cool to slightly above room temperature (warm but not hot).

Form Nigiri

Wet hands with water mixed with a little rice vinegar to prevent sticking. Take about 1.5–2 tbs (roughly 18–22 g) of seasoned rice and shape it into an oblong mound with a light, compact pressure. Place a small dab (~1/8 tsp) of wasabi on top of the rice (optional). Lay a slice of tuna over the rice, pressing gently to adhere. Repeat to make 8–10 pieces.

Sauce & Finish

Prepare Dipping Sauce

In a small bowl combine 4 tsp soy sauce with 2 tsp ponzu (if using) and a few drops (~1/4 tsp) fresh lemon. Stir gently. Serve in shallow dipping dishes alongside wasabi and pickled ginger.

Plate & Serve

Arrange nigiri or sashimi slices on a chilled platter. Add pickled ginger and a small mound of wasabi. Optionally drizzle a tiny line of soy/ponzu on the fish or spray lightly with the sauce using a spoon—avoid soaking. Serve immediately so rice remains at ideal texture and tuna is at slightly cool temperature.
