Heat vegetable oil in a large skillet over medium-high heat. Add the potatoes, season with salt, black pepper, and paprika, and fry until golden and crispy, about 15-20 minutes. Stir occasionally to ensure even cooking.

Make the Hollandaise Sauce

In a double boiler or heatproof bowl, whisk together the egg yolks and lemon juice until the mixture is thickened and pale. Gradually drizzle in the melted butter while continuously whisking until the sauce is smooth and creamy. Season with salt and cayenne pepper.
