Prepare the Pears

Peel and core the ripe pears. Cut them into small chunks and place them in a bowl.

Make the Sugar Syrup

In a medium saucepan, combine the granulated sugar and water. Heat over medium heat, stirring until the sugar has completely dissolved. Allow it to cool slightly.

Blend the Ingredients

In a blender, combine the pear chunks, cooled sugar syrup, fresh lemon juice, ground cardamom, and a pinch of salt. Blend until smooth.

Chill the Mixture

Transfer the blended mixture to a bowl and refrigerate for at least 2 hours, or until thoroughly chilled.

Churn the Sorbet

Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

Freeze the Sorbet

Transfer the churned sorbet into an airtight container and freeze for at least 4 hours, or until firm.
