Marinate the Chicken

In a bowl, combine the chicken thighs, grated ginger, whiskey, soy sauce, garlic, salt, and pepper. Mix well and let marinate for at least 30 minutes.

Sauté the Vegetables

In a large skillet, heat olive oil over medium heat. Add the red bell pepper, green beans, carrot, and sauté for about 5-7 minutes until they are tender but still crisp.

Cook the Chicken

Remove the chicken from the marinade (reserve the marinade) and add it to the skillet. Cook for about 6-8 minutes, turning occasionally, until the chicken is browned and cooked through.

Add Spinach and Sauce

Add the reserved marinade to the skillet along with the fresh spinach. Cook for another 3-5 minutes until the spinach has wilted and the sauce has thickened slightly.

Serve

Serve the drunken ginger chicken hot, garnished with additional fresh ginger if desired.
