    Mix dry rub

    Whisk together brown sugar, smoked paprika, kosher salt, black pepper, garlic powder, onion powder, chili powder, and cayenne (if using) in a bowl until evenly combined. Break up any brown sugar lumps.

Ribs preparation

    Prep ribs

    Preheat oven to 300°F (150°C). Pat the ribs dry with paper towels. If the membrane (silver skin) is still present on the bone side, slide a knife under it and pull it off using a paper towel for grip.

    Bind and rub

    Spread the yellow mustard evenly over both sides of the ribs (this acts as a binder). Generously apply the prepared dry rub, pressing it into the meat so it adheres. Reserve any excess rub for later if desired.

Braising/Roasting

    Wrap for braising

    Place each rack (or half rack) bone-side down on a large piece of aluminum foil. Pour about 1/2 cup water or apple juice into the foil packet (use 1 cup total for two racks). Tightly seal the foil to create a packet, leaving space for steam but ensuring no leaks.

    Bake low and slow

    Place the foil packets on a rimmed baking sheet and bake in the preheated oven for 2 to 2 1/2 hours, until the meat is tender and pulls back from the ends of the bones by about 1/4 to 1/2 inch. Check for tenderness: a fork should slide into the meat easily.

Honey BBQ sauce

    Make sauce

    While ribs bake, combine ketchup, honey, apple cider vinegar, Worcestershire sauce, brown sugar, smoked paprika, garlic powder, onion powder, hot sauce (if using), salt, and black pepper in a small saucepan. Warm over medium heat, stirring, until the brown sugar dissolves and the sauce is smooth. Simmer gently 5 minutes, then remove from heat and keep warm.

Finishing

    Glaze and broil/grill

    When ribs are tender, carefully open the foil packets and transfer ribs to a baking sheet lined with foil, bone-side down. Brush a generous layer of the honey BBQ sauce over the meaty side of the ribs. Brush on an extra drizzle of honey for sheen if desired. Set oven to broil (or preheat a grill to medium-high). Broil/grill the ribs 3–5 minutes until the sauce is bubbly and beginning to caramelize; watch closely to avoid burning. Remove and brush another light coat of sauce.

    Let ribs rest 5 minutes. Slice between the bones into portions. Garnish with chopped parsley, cut into 4 servings, and serve remaining sauce on the side.
