If oysters were refrigerated, bring them closer to room temperature for 10 minutes. Drain any excess liquor, gently blot each oyster dry on paper towels to remove surface moisture—this helps the breading adhere and prevents splattering.

Place oysters in a bowl with buttermilk, 1 tsp kosher salt, 1 tsp black pepper, and hot sauce (if using). Stir gently to coat. Marinate 10–20 minutes in the refrigerator while you prepare the breading and oil.

Breading

In a shallow bowl or plate, whisk together the flour (3 tbs) and cornstarch (2 tbs). Add 1 tsp garlic powder, 1 tsp smoked paprika, 1/2 tsp onion powder, 1/4 tsp cayenne, 1/2 tsp kosher salt, and 1/4 tsp black pepper. This dry mix will be the first and last dry components to ensure crispness.

Place the breadcrumbs or panko in a second shallow bowl or plate. Taste the breadcrumbs; if you like more seasoning, fold in a pinch more salt and 1/4 tsp paprika.

In a third shallow bowl, whisk the beaten egg with 2 tbs milk (or water) until homogeneous. This wet dredge helps breadcrumbs adhere and creates a puffier crust.

Frying

Set a large heavy skillet or a medium saucepan over medium-high heat. Pour in enough neutral oil so it reaches about 1 to 1 1/2 inches deep (approximately 2 cups for a small pan). Attach a thermometer to the pan (or use a thermometer that you can hold in the oil). Heat the oil to 350°F (175°C).

Prepare a wire rack set over a rimmed sheet pan lined with paper towels to drain the fried oysters. This keeps them crisp rather than letting them sit directly on paper.

Working one oyster at a time: Remove an oyster from the buttermilk, let excess drip off, then lightly dredge it in the flour-cornstarch mixture, shaking off excess. Next, dip it into the egg wash, letting excess drip. Finally press it into the breadcrumbs/panko to coat evenly, pressing gently so crumbs adhere. Place breaded oysters on a tray and repeat for all 5 oysters.

When the oil reaches 350°F (175°C), gently lower 2–3 oysters into the oil (do not overcrowd; fry in batches if needed). Fry until golden brown and crisp, about 1.5–2.5 minutes per side depending on oyster size. Use a slotted spoon or spider to turn if necessary and to remove them when done.

Transfer fried oysters to the prepared wire rack to drain. Sprinkle immediately with a light pinch of salt if desired. Let rest 1–2 minutes before serving so juices redistribute and crust cools slightly.

Arrange the 5 deep-fried oysters on a small plate or appetizer board. Garnish with chopped parsley and lemon wedges. Serve with tartar sauce or spicy mayo on the side for dipping.
