    Prepare cabbage

    Trim the base of the napa cabbage if needed and separate into quarters lengthwise. Rinse under cold water. Cut each quarter into 2–3 inch (5–7 cm) wide pieces so leaves remain attached at the base but are easy to handle.

    Salt the cabbage

    In a large nonreactive bowl, layer cabbage pieces and sprinkle the coarse salt between layers, concentrating on thicker white parts. Massage salt into the leaves briefly to distribute. Add enough cold water to just cover the cabbage (about 1–1.5 L). Place a plate or weight on top to keep submerged. Let sit 2 to 3 hours, turning or flipping the cabbage every 30–40 minutes so salt penetrates evenly.

    Prepare radish and scallions

    While the cabbage salts, peel and cut the Korean radish into 1/4-inch matchsticks (julienne) or small matchstick pieces. Trim and cut green onions into 1.5–2 inch (4–5 cm) lengths. If using Asian chives, cut into similar lengths. Mince garlic and ginger together finely or grate on a microplane.

    After 2–3 hours when cabbage leaves are flexible and slightly translucent, drain the salted water and rinse the cabbage thoroughly 2–3 times under cold running water to remove excess salt. Taste a leaf; it should be seasoned but not overly salty. Let the cabbage drain in a colander for 20–30 minutes, pressing gently to remove excess water. Reserve about 1/2 cup (120 ml) of the salty brine if you want to use to adjust seasoning later.

Make Spicy Paste

    If using starch: combine 2 tablespoons water and 1 teaspoon tapioca starch (or rice flour) in a small saucepan and heat gently, stirring until slightly thickened (about 1–2 minutes). Let cool to warm.

    In a bowl, combine the gochugaru (4 tbs), fish sauce (3 tbs), minced garlic and ginger, optional salted shrimp (1 tsp) and sugar (1 tsp). Add the cooled starch slurry or 2 tablespoons water to reach a spreadable paste consistency. Adjust gochugaru up to 1–2 tbs more if you want it hotter. Stir until you have a smooth, thick paste.

Mixing

    Assemble the kimchi: Wearing food-safe gloves (recommended to protect hands), place the drained cabbage in a large bowl. Add the radish matchsticks, green onions, and Asian chives (if using). Scoop the spicy paste and spread it between each cabbage leaf, massaging so the paste coats leaves and vegetable bits evenly. Be thorough but gentle so leaves stay intact.

    Taste and adjust: If the mixture seems too salty or intense, add up to 1–2 tbs of the reserved brine or 1–2 tbs water to mellow. If it needs more umami, add an extra 1 tsp fish sauce. If you prefer more heat, add additional gochugaru 1 tbs at a time.

Pack & Ferment

    Pack the kimchi tightly into a clean glass jar or fermentation vessel, pressing down so liquid rises and air pockets are minimized. Leave 1–2 inches (2.5–5 cm) headspace. Wipe rim clean and seal with a lid. If you want to encourage fermentation and avoid explosion risk, use a loosely fitting lid or a fermentation airlock.

    Ferment at room temperature (18–22°C / 64–72°F) for 1–3 days for a quick, mildly tangy kimchi. Check daily: press down to release gas and ensure vegetables remain submerged. Once it reaches your preferred sourness, refrigerate to slow fermentation. For deeper flavor, ferment 1–2 weeks at cooler room temperatures before refrigerating.

Serve

    When ready to eat, drizzle toasted sesame oil (1 tsp) and sprinkle sesame seeds (1 tsp) if desired. Serve as a side dish, with rice, stews, or use in recipes. Kimchi will continue to develop flavor in the fridge and keeps well for several weeks (flavor intensifies over time).
