In a medium saucepan, combine 6 cups water and 2 cups low-sodium bone or chicken stock (or dashi).

Once simmering, reduce heat to low and skim any scum or foam that rises to the surface with a small spoon. Simmer gently for 12 minutes to extract flavor from the ginger and onion without clouding the broth further.

Prepare egg white clarifier
In a small bowl, whisk 1 egg white with 1 tablespoon cold water until slightly frothy but not fully beaten into a foam. This will help attract suspended particles.

Remove from heat and allow to rest undisturbed for 3–4 minutes so the raft settles.

Strain: Line a fine-mesh sieve with a double layer of cheesecloth or a clean paper towel and place over a clean pot or heatproof bowl. Carefully ladle or pour the broth through the lined sieve, leaving the egg raft and solids behind. Press very gently with the back of a spoon if needed to recover broth but avoid forcing cloudy liquid through.
