Press the tofu to remove excess moisture. Cut it into bite-sized cubes.

Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add garlic and ginger, and sauté for about 1 minute until fragrant.

Add the bell peppers, broccoli, and carrots to the skillet. Sauté for about 5-7 minutes until vegetables are tender but still crisp.
