Prepare the Crabs
Rinse the soft shell crabs under cold water and pat them dry with paper towels. Remove the gills and any unwanted parts.
Make the Batter
In a bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and cold water. Add the egg and whisk until smooth.
Heat the Oil
In a deep pan or fryer, heat the vegetable oil over medium-high heat until hot (about 350°F or 175°C).
Fry the Crabs
Dip each crab into the batter, allowing excess to drip off. Carefully place them in the hot oil and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
Prepare the Sauce
In a separate pan, heat a tablespoon of oil over medium heat. Add minced garlic, sliced bell peppers, and sliced chili peppers. Sauté for 2-3 minutes until soft.
Combine and Serve
Add the soy sauce, chili paste, and sugar to the vegetable mixture. Stir well to combine and heat through. Serve the fried crabs topped with the spicy vegetable sauce and garnish with chopped green onions.
