Prepare the steak
Cut the tenderloin steak into bite-sized cubes. Season with salt, black pepper, and soy sauce. Let marinate for 15 minutes.
Sauté the vegetables
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add sliced onion and bell peppers, and sauté for about 5-7 minutes until they are tender. Remove from the skillet and set aside.
Cook the steak
In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and sauté for about 30 seconds until fragrant. Then add the marinated steak cubes and cook for about 5 minutes until browned.
Thicken the sauce
In a small bowl, mix cornstarch with a little water to create a slurry. Add this to the skillet with the cooked steak, and stir well. Cook for another 2-3 minutes to allow the sauce to thicken.
Combine and serve
Return the sautéed vegetables to the skillet, mix everything well, and cook for an additional 2 minutes. Adjust seasoning with more salt or black pepper if needed. Serve hot.
