Prepare the Sauce
In a bowl, mix peanut butter, soy sauce, sesame oil, minced garlic, minced ginger, and water until well combined.
Thicken the Sauce
In a small bowl, mix cornstarch with a little water to form a slurry. Add this to the sauce mixture and stir until combined. Set aside.
Cook the Vegetables
In a pan over medium heat, add a splash of sesame oil. Sauté the snow peas and sliced red chili peppers for about 2-3 minutes until they are tender-crisp.
Combine and Serve
Pour the peanut sauce over the sautéed vegetables. Stir well and cook for another 2-3 minutes until heated through. Season with salt and black pepper to taste. Serve warm.
