Prepare the Chicken
Start by flattening the chicken breasts to an even thickness using a meat mallet. This ensures even cooking.
Make the Batter
In a bowl, whisk together the flour, cornstarch, salt, and black pepper. In another bowl, whisk the egg and milk together. Combine the wet and dry ingredients until just mixed.
Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Batter and Fry the Chicken
Dip each chicken breast into the batter, allowing excess to drip off. Carefully place in the hot oil and fry for about 5-7 minutes on each side, until golden brown and cooked through. Remove and drain on paper towels.
Make the Lemon Sauce
In a small saucepan, combine the juice of 2 lemons, 1/4 cup of sugar, and 1 tablespoon of cornstarch. Heat over medium heat until the mixture thickens, stirring frequently.
Serve
Slice the fried chicken and drizzle the lemon sauce over the top. Serve with your choice of sides.
