Prepare the Ingredients
Chop the tomatoes and chives, and set aside. Rinse the capers and pat dry.
Fry the Capers
In a small frying pan, heat olive oil over medium heat. Add the capers and fry until they are crispy, about 2-3 minutes. Remove and drain on paper towels.
Make the Omelette
In a bowl, whisk together the eggs until well blended. Heat a non-stick skillet over medium heat and pour in the eggs. Allow to cook for about 2 minutes until the edges start to set.
Add Fillings
Add the chopped tomatoes, smoked salmon, and dollops of cream cheese on one half of the omelette. Cook for another 2-3 minutes until the eggs are fully set but still soft.
Fold and Serve
Carefully fold the omelette in half, slide it onto a plate, and top with crispy capers, crème fraiche, and chives. Serve immediately.
