Make the Omelet
In a bowl, whisk together the eggs, adding a pinch of salt and pepper. Heat a non-stick skillet over medium heat and add olive oil. Pour the eggs into the skillet and let them cook undisturbed for about 2 minutes, until the edges start to set.
Add Fillings
Once the edges are set, gently lift the omelet edges with a spatula and tilt the pan to let the uncooked egg flow to the edges. After about 3-4 minutes, when the top is still slightly runny, add cream cheese, chopped chives, and smoked salmon on one half of the omelet and fold the other half over.
Cook and Serve
Cook for another minute until the cheese is melted and the omelet is cooked through. Slide the omelet onto a plate, and top with creme fraiche, sliced red onion, and fried capers.
