Prepare the Butter
In a small bowl, mix the softened butter with sun-dried tomatoes, minced garlic, and chopped cilantro until well combined. Set aside.
Prepare the Salmon
Preheat the grill or oven to 400°F (200°C). Rub the king salmon fillets with olive oil, then season generously with red chili powder, salt, and black pepper.
Cook the Wild Rice
In a saucepan, bring 2 cups of water to a boil. Add the wild rice and a pinch of salt. Reduce heat to low, cover, and simmer for 45-50 minutes or until the rice is tender.
Sauté Seasonal Vegetables
In a skillet, heat a tablespoon of olive oil over medium heat. Add seasonal vegetables and sauté for about 5-7 minutes until tender but still crisp.
Serve
Plate the cooked wild rice and sautéed vegetables. Top each salmon fillet with a generous dollop of the sun-dried tomato butter. Enjoy!
