Fritter Preparation

Mix Cheese Filling

In a large mixing bowl, combine the ancho chili caciotta, sharp cheddar, Chihuahua cheese, roasted red peppers, and spicy mayo. Mix well until all ingredients are thoroughly combined.

Form Fritters

Using your hands, form the cheese mixture into small balls or patties, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.

Prepare Breading Station

Set up a breading station with one bowl of flour, one bowl of beaten eggs, and one bowl of panko breadcrumbs. Season the flour with salt and black pepper.

Bread the Fritters

Coat each fritter in flour, shaking off the excess. Dip it into the beaten eggs, ensuring it's fully coated, then roll it in the panko breadcrumbs until well covered. Place back on the baking sheet.

Fry the Fritters

In a large pot or deep skillet, heat the oil over medium-high heat. Once hot, carefully add the fritters in batches, frying until golden brown on all sides, about 3-4 minutes. Remove and drain on paper towels.
