Espresso Crusted Elk Tenderloin
Prepare the Elk Tenderloin
Preheat your oven to 400°F (200°C). Pat the elk tenderloin dry with paper towels.
Make the Espresso Rub
In a small bowl, mix together the espresso powder, brown sugar, salt, and black pepper.
Coat the Tenderloin
Rub the olive oil all over the tenderloin, then generously coat the meat with the espresso rub, pressing it into the surface.
Sear the Meat
In a hot skillet over medium-high heat, sear the tenderloin for 3-4 minutes on each side until a crust forms.
Roast in the Oven
Transfer the tenderloin to the preheated oven and roast for 15-20 minutes, or until it reaches your desired level of doneness (135°F for medium-rare).
Rest and Serve
Remove the tenderloin from the oven and let it rest for 5-10 minutes before slicing and serving.
