Preparation and Cooking
Marinate the Lamb
Place the whole rack of lamb in a shallow dish and pour the marinade over it. Ensure the lamb is fully coated. Cover and refrigerate for at least 2 hours, or preferably overnight.
Preheat the Oven
Preheat your oven to 425°F (220°C).
Prepare the Glaze
In a small saucepan, combine honey and balsamic vinegar. Heat over medium heat until it starts to simmer and thicken slightly, about 5-7 minutes. Remove from heat.
Roast the Lamb
Remove the lamb from the marinade and place it on a roasting rack in a baking pan. Roast in the preheated oven for 25-30 minutes for medium-rare, basting with the glaze halfway through.
Rest and Serve
Once the lamb is done, remove it from the oven and let it rest for 10 minutes before slicing. Serve with the remaining glaze drizzled on top.
