Bake the Potatoes

Preheat the oven to 400°F (200°C). Wash and scrub the baking potatoes thoroughly. Prick the potatoes with a fork a few times. Rub them with olive oil and sprinkle with salt. Place on a baking sheet and bake for about 45-60 minutes, or until tender.

Prepare the Cajun Chicken

While the potatoes are baking, heat olive oil in a skillet over medium heat. Season the chicken breasts with Cajun seasoning, salt, and black pepper. Cook the chicken for about 6-7 minutes on each side, or until cooked through. Remove from heat and let it rest for a few minutes before dicing.

Stuff the Potatoes

Once the potatoes are baked, remove them from the oven and allow them to cool slightly. Cut a slit in the top of each potato and gently push the ends to open them. Fluff the insides with a fork, then spoon in the diced Cajun chicken. Top with shredded cheddar cheese, sour cream, and chopped chives.

Return the stuffed potatoes to the oven for an additional 5-10 minutes, until the cheese is melted. Serve hot and enjoy your Cajun chicken over stuffed baked potato!
