Preparing the Potatoes

Bake the Potatoes

Preheat the oven to 400°F (200°C). Scrub the potatoes and poke holes in them with a fork. Rub the potatoes with olive oil, and sprinkle with salt and black pepper. Place directly on the oven rack and bake for 45-60 minutes until tender.

Prepare the Filling

Once the potatoes are cooked, remove them from the oven. Let them cool slightly, then cut them in half lengthwise and scoop out some of the flesh into a bowl. Mix the flesh with butter, sour cream, cheese, and chives. Spoon the filling back into the potato skins.

Blacken the Shrimp

In a bowl, combine paprika, cayenne pepper, garlic powder, onion powder, thyme, black pepper, and salt. Toss the shrimp in the spice mixture until well coated. In a skillet, heat butter over medium-high heat. Add the shrimp and cook for about 2-3 minutes on each side until they are opaque and cooked through.
