Prepare glass
Chill a Collins or highball glass by filling it with ice and a little cold water while you assemble ingredients, or place it in the freezer for a few minutes.
Combine base spirits
Discard the chilling ice/water from the glass. Add 1.5 oz dry sherry, 0.25 oz maraschino liqueur, 0.5 oz fresh lime juice, 0.25 oz simple syrup and 2 dashes Angostura bitters into the chilled glass.
Add ice
Fill the glass with 3–4 large ice cubes, leaving room for the cola.
Top with cola
Slowly pour 6 oz chilled cola over the back of a spoon or down the side of the glass to preserve carbonation and create a gentle layering with the sherry mixture.
Finish & garnish
Give the drink one gentle stir (1–2 turns) to integrate flavors without flattening the soda. Drop in 2 maraschino cherries and garnish with a lime wheel or wedge on the rim.
Serve
Serve immediately with a straw or stirring stick. Encourage sipping to enjoy the interplay of nutty sherry, sweet cherry notes and cola.
