Prepare and cook sauce
Heat 1 tablespoon vegetable oil in a medium skillet over medium heat. Add chopped onion and cook, stirring occasionally, until softened, about 3 minutes. Add chopped jalapeño and garlic and cook 30–45 seconds until fragrant.
Add the chopped tomatoes and cook until they begin to break down, about 6–8 minutes. Use the back of a spoon to mash tomatoes slightly as they soften.
Stir in cumin, oregano, salt, and black pepper. Pour in 1/2 cup broth, bring mixture to a simmer, and reduce heat to low. Simmer 6–8 minutes until slightly thickened. Taste and adjust salt/heat as needed.
For a smoother sauce (optional), transfer mixture to a blender or use an immersion blender and puree to desired texture. Return to skillet and keep warm over low heat until ready to assemble.

Warm tortillas
Heat a dry skillet or comal over medium-high heat. Warm each corn tortilla 20–30 seconds per side until pliable and lightly blistered. Keep warm wrapped in a clean kitchen towel.
Fry tortillas lightly (optional for crisp edges)
If you prefer slightly crisp edged tortillas, pour 2 tablespoons oil into a skillet and heat until shimmering. Fry each tortilla 15–20 seconds per side to create a lightly crisp shell. Drain on paper towels and keep warm.
Heat refried beans
Warm 1 cup refried beans in a small saucepan over low heat, stirring occasionally. If too thick, stir in 1–2 tablespoons water or broth to reach a spreadable consistency. Keep warm.
Cook eggs
In a nonstick skillet, heat 1 tablespoon oil over medium. Crack eggs and fry to your liking (sunny-side up with set whites and runny yolks is traditional) — cook 3–4 minutes for sunny-side up. Season eggs with a pinch of salt and pepper.
Assemble: On each warmed tortilla, spread about 2–3 tablespoons warm refried beans. Place a fried tortilla next to each other or stack depending on plating. Place one fried egg on each tortilla, then spoon about 1/3 cup ranchero sauce over and around the eggs so yolks remain saucy.
Toppings & garnish
Finish each plate by sprinkling 2–3 tablespoons crumbled queso fresco over the sauced eggs, add a spoonful of sour cream or a drizzle of crema, scatter about 1 tablespoon chopped cilantro per plate, and add sliced avocado or a scoop of guacamole.
Serve with lime wedges and hot sauce on the side. Encourage diners to squeeze lime over the eggs and sauce before eating.
