Prepare potatoes
Wash and peel (if desired) the potatoes. Cut into 1/2-inch dice so they cook evenly — aim for roughly uniform pieces (about 3–4 cups diced from 1 lb).
Pan-fry
Heat a large skillet over medium-high heat. Add 1 tablespoon vegetable oil and 1 tablespoon butter. When butter melts and the pan is hot, add the drained potatoes in a single layer. Let them cook undisturbed 3–4 minutes to develop color, then stir or flip pieces and continue cooking 4–6 minutes, stirring occasionally, until golden-crisp on most sides and cooked through.

Whisk eggs
Crack 6 large eggs into a medium bowl. Add 3 tablespoons whole milk or half-and-half, 1 teaspoon fine sea salt, and 1/2 teaspoon freshly ground black pepper. Whisk vigorously until mixture is homogenous and slightly frothy (about 20–30 seconds).
Cook soft-scramble
Pour the egg mixture into the pan. Allow eggs to sit undisturbed for 10–15 seconds until edges just begin to set. Using a silicone spatula, sweep across the bottom to form large soft curds, then repeatedly pull the eggs from the edges to the center every 10–15 seconds. Keep the heat low — the goal is slow gentle coagulation. After about 2–3 minutes total (timing will vary), when eggs are mostly set but still very creamy and slightly glossy, remove the pan from heat.
Finish eggs with butter
Immediately add the remaining 1 tablespoon cold butter (cut into pieces) to the eggs and gently fold until melted and incorporated. This stops cooking and enriches texture.
Cheese & plating
Assemble and garnish
Arrange the warm crispy potatoes on plates or a serving dish. Spoon the soft-scrambled eggs with melted white cheddar alongside or over the potatoes. Sprinkle sliced chives and a light pinch of flaky sea salt if using. Serve immediately while eggs are creamy and potatoes are hot.
