Prep and marinate chicken

Pat chicken thighs dry and cut into 1/2-inch strips. In a bowl combine olive oil, chili powder, ground cumin, smoked paprika, garlic powder, onion powder, salt, black pepper and lime juice. Add chicken, toss to coat and let marinate 10–15 minutes at room temperature (or up to 2 hours refrigerated).

Cook chicken

Heat a large skillet over medium-high heat. Add a teaspoon of oil and when shimmering add the chicken strips in a single layer. Cook 4–6 minutes, stirring occasionally, until browned and cooked through (internal temp 165°F / 74°C). Remove from heat and let rest 2 minutes, then shred or chop into smaller bite-sized pieces.

Warm tortillas and assemble

Warm 4 tortillas on a dry skillet or in a hot oven (350°F/175°C for 3–5 minutes) until pliable. Divide cooked chicken among the tortillas. Top each with shredded lettuce, diced tomatoes, shredded cheese, a drizzle of sour cream, and chopped cilantro. Serve with lime wedges.

Beef Taco (makes 4 tacos)

Cook beef

Heat a skillet over medium heat and add 1 teaspoon olive oil. Sauté the chopped onion until soft, 3–4 minutes. Add minced garlic and cook 30 seconds. Add ground beef and cook, breaking up with a spoon, until browned, 6–8 minutes. Drain excess fat if needed.

Season beef

Stir in chili powder, ground cumin, tomato paste, salt and pepper. Add 2 tablespoons beef broth or water to loosen and simmer 2–3 minutes so flavors meld. Adjust seasoning to taste.

Assemble beef tacos

Warm 4 tortillas. Spoon seasoned beef evenly into tortillas. Top with shredded lettuce, diced onions, shredded cheese and a spoonful of salsa. Serve with lime wedges and hot sauce.

Bean Taco (makes 4 tacos)

Prepare beans

Heat a small skillet over medium and add 1 teaspoon olive oil. Add drained beans and mash lightly with the back of a spoon or potato masher, leaving some whole beans for texture. Stir in ground cumin, chili powder, lime juice, salt and pepper. Cook 3–4 minutes until warmed through. If mixture is too dry, add 1–2 tablespoons water.

Assemble bean tacos

Warm 4 tortillas. Divide the seasoned beans among tortillas. Top with shredded lettuce or cabbage, crumbled queso fresco or shredded cheese, sliced avocado or guacamole and pickled jalapeños if using. Garnish with cilantro and a squeeze of lime.

Plan the mix: this recipe produces 12 tacos total when you make 4 chicken, 4 beef and 4 bean. To make all chicken (12), triple the chicken section ingredients; to make all beef or all bean, scale the respective section ingredients accordingly.

Keep components warm: keep cooked proteins warm on low heat or in a 200°F (95°C) oven covered with foil while finishing other components.

Final assembly for a pizza box: Arrange 12 warmed tortillas flat or slightly folded in a clean shallow pan or directly in the pizza-style box, grouping by type if desired. Fill each tortilla with its designated protein and toppings (as above). Add lime wedges, extra salsa/hot sauce and a small container of sour cream/crema in the box. Sprinkle chopped cilantro over all tacos for garnish.

Serve: Close the box carefully so tacos remain upright if possible. Provide napkins and utensils as needed. Recommend reheating leftover tacos in a 350°F (175°C) oven for 6–8 minutes or in a skillet until warmed through.
