Cook the potatoes
Place the peeled, cubed potatoes in a pot and cover with cold water by about 1 inch. Add 1/2 teaspoon salt. Bring to a boil, reduce to a simmer and cook until potatoes are just tender when pierced with a fork, about 8–10 minutes. Drain thoroughly and let steam-dry in the colander for 3–4 minutes.
Sauté aromatics and vegetables
While the potatoes cook, heat 3 tablespoons vegetable oil in a wide skillet over medium heat. Add the chopped onion and cook, stirring occasionally, until softened and beginning to brown, 5–7 minutes. Add the minced garlic and chopped jalapeño and cook 30–45 seconds until fragrant. Stir in the diced green bell pepper and cook 3–4 minutes until slightly softened. Add the diced tomato and cook 2–3 minutes until the tomato releases juices but still holds shape.
Season the mixture
Stir in smoked paprika, ground cumin and dried oregano. Cook 30–45 seconds to bloom the spices. Add 1 teaspoon salt and 1/4 teaspoon black pepper (reserve remaining for final adjustment).
Combine potatoes with vegetables
Add the drained potatoes to the skillet. Gently toss and fold with a spatula so the potato cubes are coated with the spiced vegetable mixture. Cook over medium heat, stirring occasionally, until potatoes take on light golden edges, about 6–8 minutes. Press some cubes lightly on the skillet surface so they get a browned crust — this creates the characteristic ranchera texture.
Finishing & Garnish
Finish and adjust seasoning
Remove skillet from heat. Stir in chopped cilantro and chopped green onions. Squeeze the juice of 1 lime over the potatoes and taste; add the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper if needed. If you like heat, add the optional hot sauce and stir to combine.
Serve
Transfer the Papas Ranchera to a serving dish. Sprinkle crumbled queso fresco or Cotija over the top and garnish with an extra sprinkle of cilantro if desired. Serve immediately while warm.
For Frying (optional alternative)
Pan-fry for extra crisp
If you prefer crispier potatoes, after boiling and draining, heat 1/2–1 cup neutral oil in a large skillet over medium-high heat until shimmering. Add potatoes in a single layer (work in batches if needed) and fry, stirring occasionally, until golden and crisp on most sides, 6–10 minutes per batch. Remove to a paper-towel-lined tray and season with a pinch of salt. Then proceed to combine with the sautéed aromatics and spices as above, tossing briefly to marry flavors.
