Method
Crispy Tofu
Press and prepare tofu
Drain the 14 oz block of extra-firm tofu and press for 15–30 minutes to remove excess moisture. After pressing, cut the tofu into 1/2-inch cubes. Pat cubes dry with paper towels.
Coat tofu
In a shallow bowl, combine 3 tbs cornstarch, 1 tsp smoked paprika, 1 tsp ground cumin, 1 tsp garlic powder, 1 tsp kosher salt, and 1 tsp black pepper. Toss the tofu cubes gently in the dry mixture until evenly coated. Shake off excess cornstarch.
Fry or pan-fry tofu
Heat a large nonstick or cast-iron skillet over medium-high heat and add 4 tbs neutral oil. When oil is shimmering, add tofu cubes in a single layer (work in batches if needed). Cook undisturbed 3–4 minutes until golden and crisp, then turn and crisp other sides another 3–4 minutes. Total fry time about 8–10 minutes until deeply golden and crunchy. Remove to a paper-towel-lined plate.
Picadillo-Style Filling
Sauté aromatics
Wipe out excess oil from the tofu pan, leaving about 1 tbs. Add 1 tbs olive oil if needed and warm over medium heat. Add 1 cup finely diced yellow onion and 1 cup finely diced red bell pepper and sauté 5–7 minutes until softened and starting to brown. Add 3 minced garlic cloves and cook 30–45 seconds until fragrant.
Build the picadillo base
Stir in 2 tbs tomato paste and cook 1 minute to deepen flavor. Add the drained 14 oz diced tomatoes and stir to combine.
Season and combine
Add 1 cup sliced green olives, 1 tbs raisins, 1 tsp ground cumin, 1 tsp dried oregano, and 1/4 tsp ground cinnamon. Pour in 1/2 cup vegetable broth or water, then season with 3/4 tsp kosher salt and 1/2 tsp black pepper. Bring to a gentle simmer, reduce heat to low, and cook uncovered 8–10 minutes to meld flavors and reduce liquid slightly.
Finish filling
Stir in 1 tbs lime juice and adjust seasoning to taste. If the mixture is too wet, simmer another 2–3 minutes. Fold the crispy tofu into the picadillo gently, allowing tofu to reheat and absorb some sauce for 1–2 minutes.
Tacos & Garnishes
Warm tortillas
Warm 8 small tortillas on a dry skillet over medium heat 20–30 seconds per side or wrap in a damp cloth and microwave 30 seconds until pliable.
Serve
Serve immediately with lime wedges on the side for squeezing over tacos.
