    Chop Vegetables

    Peel and chop the carrots, celery, onion, and potatoes into small, even pieces. Mince the garlic cloves.

    Open Tomatoes

    Open the can of tomatoes and set aside.

Cooking the Soup

    Heat Oil

    In a large pot, heat the olive oil over medium heat.

    Sauté Vegetables

    Add the chopped onions, carrots, and celery to the pot and sauté for about 5 minutes until softened. Add minced garlic and sauté for another 1-2 minutes.

    Add Potatoes and Tomatoes

    Add the chopped potatoes and canned tomatoes (including juices) to the pot, stirring to combine.

    Add Broth and Seasonings

    Pour in the vegetable broth, and add dried thyme, bay leaves, salt, and black pepper. Stir well.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until the vegetables are tender.

    Add Spinach

    In the last 5 minutes of cooking, add the spinach to the pot and stir until wilted.

    Remove Bay Leaves

    Before serving, remove the bay leaves from the soup.

    Ladle the soup into bowls and serve hot with slices of crusty bread on the side.
