Method

Pasta Preparation

  1. 1

    Cook the Pasta

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Vegetable Preparation

  1. 2

    Prepare the Vegetables

While the pasta is cooking, chop the bell peppers, zucchini, and carrots into bite-sized pieces. Halve the cherry tomatoes and separate the broccoli florets.

Sauce Preparation

  1. 3

    Make the Garlic Sauce

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.

  2. 4

    Add Vegetables

Add the prepared bell peppers, zucchini, carrots, broccoli, and cherry tomatoes to the skillet. Sauté for 5-7 minutes until the vegetables are tender.

  3. 5

    Add Broth and Season

Pour in the vegetable broth, and season with salt and black pepper. Bring to a simmer and let cook for an additional 3-5 minutes.

Combine and Serve

  1. 6

    Combine Pasta and Sauce

Add the drained pasta to the skillet with the vegetables and sauce. Toss everything together until the pasta is evenly coated with the sauce.

  2. 7

    Garnish and Serve

Remove from heat, sprinkle with grated Parmesan cheese, and garnish with fresh basil leaves. Serve immediately.
