Fish Preparation

Make the Batter
In a bowl, mix together the all-purpose flour, baking powder, and salt. Gradually whisk in the cold sparkling water until the batter is smooth and thick enough to coat the back of a spoon.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter the Fish
Dip each fish fillet into the batter, ensuring it is well coated.

Fry the Fish
Carefully place the battered fish into the hot oil, a few pieces at a time. Fry for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Potatoes
Peel the potatoes and cut them into thick chips (about 1 inch wide).

Heat the Oil for Chips
In another pot or fryer, heat the vegetable oil to 325°F (160°C).

Blanch the Chips
Add the cut potatoes to the hot oil in batches and blanch for about 5 minutes until they are soft but not colored. Remove and drain on paper towels.

Crisp the Chips
Increase the oil temperature to 375°F (190°C). Fry the blanched chips in batches until they are golden and crispy, about 3-4 minutes. Sprinkle with salt immediately after frying.

Cook the Peas
In a small saucepan, bring water to a boil and add the frozen peas. Cook for 2-3 minutes until tender.
