In a large bowl, combine the chicken thighs with salt, black pepper, garlic powder, and paprika. Ensure that the chicken is evenly coated with the seasoning. Let it marinate for at least 30 minutes to enhance flavor.

Place the flour in a shallow dish. This will be used to dredge the chicken before breading.

In a separate shallow bowl, whisk together the eggs and milk until well combined.

In another shallow dish, combine the panko breadcrumbs and dried Italian herbs. Mix well to ensure the herbs are evenly distributed.

Bread the Chicken
Take each seasoned chicken thigh, dredge it in the flour, shaking off the excess. Next, dip it in the egg mixture, allowing any excess to drip off. Finally, coat the chicken in the breadcrumb mixture, pressing gently to adhere.

In a large skillet, heat the vegetable oil over medium-high heat until shimmering. You can test if it's ready by dropping a small piece of bread in the oil; it should sizzle immediately.

Carefully add the breaded chicken thighs to the hot oil, cooking in batches if necessary to avoid overcrowding. Fry for about 5-7 minutes on each side, or until golden brown and crispy. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).
