    Melt Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Set the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let it cool slightly.

    Whisk Egg Yolks and Sugar

    In a separate bowl, beat the egg yolks and granulated sugar together until pale and creamy. This should take about 3-5 minutes.

    Combine Mixtures

    Slowly pour the melted chocolate mixture into the egg yolk mixture, stirring continuously until well combined.

    Whip Egg Whites

    In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the whipped egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

    Whip Cream

    In another bowl, whip the heavy cream with the vanilla extract until soft peaks form. Gently fold the whipped cream into the chocolate mixture until just combined.

    Chill Mousse

    Spoon the mousse into serving dishes or cups. Cover and refrigerate for at least 2 hours or until set.

    Once the mousse is set, serve chilled. You can garnish with chocolate shavings or berries if desired.
