Prepare the Pork

Preheat your oven to 400°F (200°C).

Season Pork
Trim any excess fat from the pork tenderloin and season it with salt, black pepper, and garlic powder.
Breading Process

Prepare Breading Station
Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of bread crumbs and Parmesan cheese.

Dredge in Flour and Eggs
Dredge the seasoned pork tenderloin in flour, shaking off the excess. Then, dip it in the beaten eggs, allowing the excess to drip off.

Coat in Bread Crumbs
Finally, coat the pork in the bread crumb and Parmesan mixture, pressing gently to ensure the crumbs adhere well.
Frying the Pork

Heat Oil
In a large skillet, heat vegetable oil over medium-high heat until it shimmers.

Fry Pork
Carefully add the breaded pork tenderloin to the skillet and cook for about 4-5 minutes on each side until golden brown and cooked through.

Drain Excess Oil
Once cooked, transfer the pork to a paper towel-lined plate to drain excess oil.
Assemble the Sandwich

Slice Pork
Slice the cooked pork tenderloin into 1/2 inch thick slices.

Spread mayonnaise on the insides of the buns.

Layer lettuce, tomato slices, and the sliced pork on the buns.
