    Make the dough

    In a large bowl combine warm water (about 105–115°F), instant yeast, and sugar. Stir and let sit 5 minutes until foamy. Add olive oil, salt, and 2 cups of the flour. Stir with a wooden spoon or dough hook until incorporated. Gradually add remaining 1 cup flour, mixing until a soft shaggy dough forms.

    Knead

    Turn dough onto a lightly floured surface and knead 6–8 minutes until smooth and elastic (or knead in stand mixer with dough hook 5–6 minutes). If dough is sticky, add up to 2 tablespoons more flour, a little at a time.

    First rise

    Lightly oil a clean bowl and place dough inside, turning to coat. Cover with plastic wrap or a damp towel and let rise in a warm place until doubled, about 60–75 minutes.

    Shape sticks

    Punch down the dough and divide into 6 equal pieces (for size 6) or 12 equal pieces (for size 12). Roll each piece into a 6–8 inch long thin stick, slightly tapered at the ends. Place sticks on a parchment-lined baking sheet about 1 inch apart.

    Second rise

    Cover loosely with a towel and let rest 15–20 minutes until slightly puffy.

    Prepare brush-on topping

    Combine melted butter, garlic powder, and dried parsley in a small bowl.

    Bake

    Preheat oven to 400°F (200°C). Brush each stick with the butter mixture and sprinkle lightly with coarse sea salt. Bake on the middle rack for 12–15 minutes, until golden brown on top.

    Finish

    Remove from oven and brush again with any remaining butter mixture. Let cool 5 minutes on the pan before transferring to a serving basket.

Tomato Sauce (for dipping)

    Sauté aromatics

    Heat 1 tablespoon olive oil in a medium saucepan over medium heat. Add the chopped onion and cook 4–5 minutes until softened and translucent. Add the minced garlic and cook 30–45 seconds until fragrant, stirring so it doesn't brown.

    Simmer sauce

    Stir in the tomato paste and cook 1 minute. Add crushed tomatoes, dried oregano, dried basil, sugar, red pepper flakes, salt, and black pepper. Bring to a gentle simmer, then reduce heat to low and simmer uncovered for 12–15 minutes, stirring occasionally.

    Adjust consistency & finish

    If the sauce seems too thick, stir in up to 2 tablespoons of water until desired consistency. Taste and adjust salt, pepper, or sugar as needed. Stir in chopped fresh basil if using, and remove from heat.

    Serve

    Transfer sauce to a small bowl for dipping. Keep warm until serving with the bread sticks. Sauce can be made ahead and reheated gently.
