Prep the fish

Keep yellowtail chilled. Pat dry with paper towels. Using a very sharp knife, remove any membrane or bloodline. Cut the yellowtail into 1/4-inch dice for a clean tartare texture; aim for uniform pieces for even seasoning.

Make the ponzu-truffle vinaigrette

In a small bowl, whisk together ponzu sauce (2 tbsp), white soy (1 tsp), truffle oil (1 tsp), neutral oil (1 tsp), fresh lime juice (1 tsp), and grated ginger (1 tsp) until emulsified. Taste and adjust: it should be bright with a whisper of truffle.

Toss fish with vinaigrette

Place diced yellowtail in a chilled bowl. Add the vinaigrette and gently fold to coat — use a light hand to avoid mashing the fish. Add finely minced chives (1 tbsp), toasted sesame seeds (1 tsp), kosher salt (1 tsp) and freshly ground black pepper (1 tsp). Toss once more, then cover and refrigerate for 5–8 minutes to allow flavors to marry (do not over-marinate).

Prepare avocado cream

Halve and pit the avocado, scoop flesh into a bowl and add lemon juice (1 tsp) to prevent browning. Add creme fraiche or Greek yogurt (2 tbsp) and a pinch of fine sea salt. Mash and whisk to a smooth, slightly creamy texture. Adjust seasoning with more lemon or salt if needed. Chill until ready to plate.

Prepare cucumber and microgreens

If using cucumber, thinly slice into matchsticks or rounds and pat dry. Reserve microgreens. These will add freshness and contrast when plating.

Assembly & Serve

Plate avocado cream: Spoon or pipe a 2–3 tablespoon dollop of avocado cream onto each plate where tartare will sit. Spread slightly to create a bed.

Portion the tartare: Using a 2.5–3 inch round ring mold (optional), pack about 3.5 ounces (roughly 100 g) of the dressed yellowtail into the mold and press gently. Invert onto the avocado bed and lift the ring. If not using a mold, spoon a neat mound of tartare onto the avocado.

Garnish: Scatter microgreens (about 1 tablespoon per serving), a few thin cucumber slices, and a small pinch of pickled ginger if using. Sprinkle additional toasted sesame seeds and chopped chives. Finish with a tiny drizzle (a few drops) of extra truffle oil and a light dusting of microplaned lime zest if desired.

Serve immediately with 3–4 crispy wonton chips or toasted baguette slices per person. Recommend eating promptly to enjoy the fresh texture and flavor.
