Prep fish
Keep the hamachi chilled until ready. Using a very sharp knife, trim any connective tissue and slice the yellowtail into thin ribbons/medallions about 1/8–1/4 inch (3–6 mm) thick. Arrange slices in a single layer on a chilled plate, slightly overlapping if desired.
Garnish
Scatter thinly sliced scallion and microgreens lightly over the plated fish. Finish with a light sprinkle of toasted sesame seeds.
Ponzu-Truffle Dressing
Combine the ponzu sauce (3 tbs), yuzu (or lime) juice (1 tbs), light soy (1 tsp), mirin (1 tsp), rice vinegar (1/2 tsp), grated ginger (1/2 tsp), and granulated sugar (1/2 tsp) in a small bowl. Whisk until sugar is dissolved.
Slowly whisk in the extra-virgin olive oil (1 tsp) to slightly emulsify the dressing. Add white truffle oil (1/4 tsp) and whisk gently to incorporate—do not overdo truffle oil; it should be a whisper of aroma.
Season the dressing with kosher salt (1/4 tsp) and a small crack or two of freshly ground black pepper (about 1 tsp). Taste and adjust: add a pinch more salt or 1/2 tsp more ponzu if you want brighter acidity.
Let the dressing rest for 2–3 minutes to allow the flavors to marry. Warm the bowl briefly in your hands to release aroma from the truffle oil if desired.
Just before serving, spoon or gently drizzle approximately 1 to 1.5 tablespoons of the dressing over the arranged hamachi, distributing evenly so each slice has a light coating. Avoid soaking the fish.
Top each slice (or several slices) with a single jalapeño round to provide contrast of heat and texture. If you prepared microgreens and scallion earlier, ensure they remain fresh and place them now.
Serve immediately so the fish remains chilled and the dressing is bright. Offer any remaining dressing on the side in case guests want more.
