Waffle Cone Batter
Prepare dry ingredients
In a medium bowl, whisk together 1 cup all-purpose flour, 1 tablespoon granulated sugar, and 1 teaspoon salt until evenly combined and no lumps remain.
Combine wet ingredients
In a separate bowl (or large measuring cup), whisk together 1 cup whole milk, 1 large egg, 4 tablespoons melted and cooled unsalted butter, and 1 teaspoon vanilla extract until smooth and uniform.
Make batter
Pour the wet mixture into the dry ingredients and stir gently until just combined. The batter should be thin and pourable with a few small lumps acceptable; do not overmix. If batter seems too thick, add up to 1 to 2 tablespoons milk to reach a thin crepe-like consistency.
Rest batter (optional)
Let the batter rest 5–10 minutes at room temperature to hydrate the flour and relax gluten; this yields a more tender cone but is optional if short on time.
Preheat waffle iron
Preheat a waffle-cone maker, pizzelle iron, or a thin-waffle maker according to manufacturer instructions until hot. If using a stovetop or electric pizzelle maker set to medium-high heat, allow it to fully heat for 5–8 minutes.
Grease iron
Brush the waffle iron grids lightly with 1 tablespoon neutral oil or spray with nonstick spray to prevent sticking.
Cooking & Shaping Cones
Cook the wafer
Spoon or pour about 3 tablespoons of batter (adjust quantity depending on your iron size) onto the center of the preheated iron. Close the lid and cook until the wafer is golden brown and crisp — typically 30–60 seconds for a thin-waffle iron or 1–2 minutes for larger irons. Watch closely to avoid burning.
Remove wafer
Carefully open the iron and use a thin, heatproof spatula or fork to lift the hot wafer off the iron. Work quickly while the wafer is still pliable.
Shape into cone
Place the hot wafer on a clean towel or cooling rack. Starting at one edge, fold the wafer over itself into a cone shape, rolling tightly for a pointed bottom and leaving a small opening at the top for ice cream. Pinch the seam briefly to help it stay sealed. Use a cone mold or an inverted small cup to help shape and let cool for 20–30 seconds to set. If needed, press the seam gently with a heatproof utensil to close.
Cool completely
Set the shaped cone upright in a cone holder or a glass to cool completely and become crisp, about 5–10 minutes. Repeat the cooking and shaping process with the remaining batter.
Finishing & Optional
Optional sugar rim
If you want a slightly crunchy rim, while the cone edge is still warm and pliable, brush lightly with a tiny bit of melted butter or water and roll the edge in the 2 tablespoons granulated sugar. Allow to cool and set.
Optional chocolate dip
For chocolate-dipped cones, melt about 1 tablespoon chocolate (increase amount for multiple cones) until smooth. Dip the top rim of each cooled cone into the melted chocolate, allowing excess to drip off, then roll in sprinkles or chopped nuts if desired. Place cones upright until the chocolate sets, ~10–15 minutes in a cool place or refrigerator for faster setting.
Storage
Store completely cooled cones in an airtight container at room temperature for up to 3 days to retain crispness. Keep away from humidity. If cones soften, re-crisp for a few minutes in a 300°F (150°C) oven on a baking sheet.
