Prepare graham cracker rim

Break 2 graham cracker squares into coarse crumbs (about 2–3 tablespoons). Place crumbs on a shallow plate. Brush the rim of 2 chilled 12-16 oz glasses with melted unsalted butter, then dip the rims into the graham crumbs to coat. Set glasses aside in the refrigerator to chill while you prepare the shake.

Toast marshmallows

Thread 4 extra mini marshmallows onto a skewer or metal fork. Using a kitchen torch, carefully toast the marshmallows until golden brown and slightly charred (about 10–20 seconds per side). If you don't have a torch, toast them under a broiler on a lined sheet for 30–60 seconds, watching closely. Set toasted marshmallows aside to cool briefly.

Prepare garnish pieces

Reserve 1 graham cracker square, break into a triangle for garnish. Break or shave the chocolate bar into small pieces or shavings (about 1 oz). Keep these ready for finishing the shake.

Combine base ingredients

In a blender add 3 cups vanilla ice cream, 1 cup whole milk, 3 tablespoons chocolate syrup, 1 tablespoon graham cracker crumbs, 2 tablespoons marshmallow creme, 1 tablespoon mini marshmallows, and the optional 4 ice cubes if you prefer a thicker, colder shake.

Blend to smooth

Blend on high for 20–30 seconds until the mixture is smooth and creamy. Stop and scrape the sides once if necessary. If the shake is too thick, add 1–2 tablespoons more milk and blend again; if too thin, add a few more tablespoons of ice cream.

Taste and adjust

Taste the shake and add another teaspoon of chocolate syrup for a richer chocolate flavor or an additional tablespoon of marshmallow creme for more sweetness; blend briefly to incorporate any additions.

Assemble and garnish

Pour the shake into the prepared chilled, graham-rimmed glasses, dividing evenly between the two (about 2 servings). Drizzle a little extra chocolate syrup down the inside of the glass if desired. Top each shake with 4 toasted mini marshmallows and a few extra mini marshmallows. Garnish with the graham cracker triangle and chocolate shavings or a small piece of chocolate on the rim. Optionally add a small dollop of marshmallow creme on top before placing toasted marshmallows for extra gooeyness.
