S'mores Assembly
Toast marshmallows (campfire method)
Skewer one marshmallow on a roasting stick. Hold it about 4–6 inches from hot embers or above the flame, rotating slowly. Toast until the exterior is deep golden brown and slightly crisp (about 1–2 minutes) or until charred to your preference (2–4 minutes). Remove from heat.
Toast marshmallows (oven/broiler method)
Preheat broiler on high and position a rack about 6 inches below the broiler. Place marshmallows spaced apart on a foil-lined baking sheet (lightly butter the sheet to prevent sticking if desired). Broil 20–45 seconds, watching closely, until marshmallows puff and brown. Remove immediately with a spatula.
Toast marshmallows (stovetop gas method)
Using long metal skewers or tongs, hold marshmallow over a low-medium gas flame, rotating until evenly browned (about 20–45 seconds). Be cautious of flare-ups and don’t leave unattended.
Assemble the s'more
Place one chocolate rectangle on a graham cracker half. Set the hot toasted marshmallow directly on top of the chocolate so the heat melts the chocolate slightly. Top with a second graham cracker and press gently to sandwich. If desired, sprinkle a tiny pinch (about 1/8–1/4 tsp) of kosher salt on the melted marshmallow before topping for contrast.
Alternative: Oven 'Open-Face' Melt
If you prefer not to toast marshmallows individually, place chocolate on graham crackers on a baking sheet, top with an un-toasted marshmallow, and broil 20–40 seconds until the marshmallow puffs and browns. Remove and top with second cracker immediately.
Serve
Let the assembled s'mores rest for 10–20 seconds so the melted chocolate and marshmallow settle, then serve warm. Repeat until all s'mores are made (yields 6 s'mores).
Tools & Safety Notes
If using skewers over a campfire, rotate marshmallows slowly for even toasting and keep a safe distance from high flames. Use heatproof gloves or tongs for handling hot skewers. If using broiler, never leave the oven unattended; marshmallows brown very quickly.
