Line the bottom of a 9-inch springform pan with parchment paper and wrap the outside of the pan with plastic wrap to prevent freezer burn.
Combine the finely crushed chocolate wafer cookies, melted butter, granulated sugar, and salt in a medium bowl. Mix until all crumbs are evenly moistened and hold together when pressed.
Press the crumb mixture evenly into the bottom (and slightly up the sides, about 1/4 inch) of the prepared pan using the back of a measuring cup or a flat-bottomed glass to compact firmly. Aim for a densely packed crust so it slices cleanly when frozen.
Place the crust in the freezer for 15–20 minutes to firm while you prepare the ice cream.
Ice Cream Layers
Soften each ice cream just until scoopable but not melted — about 10–15 minutes at room temperature depending on your kitchen. Stir briefly to make it pliable.
First Layer (Vanilla)
Spoon half of the softened vanilla ice cream over the chilled crust and spread into an even layer about 3/4 inch thick. Smooth the surface with an offset spatula or the back of a spoon. Press lightly to remove air pockets.
Optional Fillings
If using hot fudge or jam, drizzle a thin even layer (about 3/4 cup of sauce total distributed as desired) over the vanilla layer. Sprinkle half of the chopped toasted nuts if using. Do not overfill — keep the layer thin so the cake remains balanced.
Second Layer (Chocolate)
Spoon the softened chocolate ice cream over the vanilla/filling layer and spread to an even thickness, filling the pan but leaving about 1/2 inch headroom for whipped frosting. Smooth the top carefully. Press lightly to ensure adhesion between layers.
Third Layer (Optional Fruit)
If using a third flavor (strawberry/fruit), add it now as a thin top layer (about 1/2 inch). Swirl in warmed fruit compote or jam if desired, but keep layers even to help with slicing.
Cover the top of the assembled cake tightly with plastic wrap so no air can form on the surface. Freeze for at least 6 hours, preferably overnight, or until fully firm (internal temp should be solid). For best texture and to ensure completely set layers, freeze 24–48 hours if possible (preorder 48 hours recommended).
Whipped Cream Frosting
If using gelatin for stabilized whipped cream, sprinkle the gelatin over the cold water and let bloom for 5 minutes. Gently microwave the bloomed gelatin for 5–7 seconds until liquefied but not boiling; set aside to cool slightly.
Whisk the cold heavy cream, powdered sugar, and vanilla in a chilled mixing bowl. Beat on medium-high speed until medium-stiff peaks form. If using gelatin, drizzle the slightly cooled gelatin into the cream during beating to stabilize. Do not overbeat — stop when peaks hold their shape and the cream is smooth.
Spread the whipped cream evenly over the top and sides of the frozen cake using an offset spatula. Work quickly but carefully. If the cake softens while frosting, return to the freezer for 10–15 minutes and then continue smoothing. For a perfectly smooth finish, refrigerate the spatula in cold water and dry between passes.
If piping decorative borders, place the cake on a turntable and use a piping bag fitted with your desired tip. Keep the cake cold by placing it back in the freezer for 10 minutes between detailed piping sections if needed.
Garnish & Final Freeze
Decorate the top with chocolate shavings, fresh berries, and a drizzle of extra sauce as desired. Press any extra nuts gently into the frosting around the base for a finished look.
Wrap the finished cake loosely in a final layer of plastic wrap or store in an airtight cake container. Return to the freezer and freeze for at least 4 more hours — preferably overnight — before serving to ensure the frosting and layers are completely set.
When ready to serve, transfer the cake to the refrigerator for 10–15 minutes to soften slightly for easier slicing. Use a sharp, hot knife (dip in hot water and dry between slices) to get clean cuts. This 9-inch cake serves approximately 12–16 slices depending on portion size.
