Cake Base (Chocolate Sandwich Cookie Crust)

Ice Cream Layers

Method

Line the bottom and sides of a 9–10 inch (23–25 cm) springform pan with a round of parchment paper. Lightly grease the sides so cake releases easily.

Combine 4 cups finely crushed chocolate sandwich cookies and 8 tbs melted butter in a bowl. If using, add 2 tsp granulated sugar. Mix until crumbs are evenly moistened and hold together when pressed.

Press the cookie crumb mixture evenly into the bottom of the prepared pan, using the base of a measuring cup to compact it. Place in the freezer while preparing ice cream layers (at least 15 minutes).

Remove ice cream from the freezer 10–15 minutes before assembly to soften slightly — it should be scoopable but not melted.

First Layer (Vanilla)

Spoon 1.5 liters slightly softened vanilla ice cream into the pan over the chilled crust. Spread evenly with an offset spatula to about one-third of the cake height (roughly 1–1.25 inches). Smooth the surface and press lightly to remove air pockets. Return to freezer for 20 minutes to firm.

Second Layer (Chocolate with Mix-ins)

Stir 1 cup mix-ins into 1 liter chocolate ice cream (reserve a few mix-ins for decoration if desired). Spread chocolate layer evenly over the frozen vanilla layer, again about one-third of the cake height. Drizzle about 1/3 cup hot fudge over the chocolate layer and swirl lightly with a knife. Freeze 30–45 minutes until firm.

Third Layer (Strawberry/Fruit)

Warm 0.5 cup strawberry compote or jam slightly so it is pourable but not hot. Fold a few tablespoons into 0.5 liter strawberry ice cream for ribbons. Spread strawberry layer evenly over the chocolate layer. Drizzle remaining compote or 0.25 cup caramel over the top for pockets of flavor. Smooth top and freeze 1–2 hours until fully solid (preferably overnight).

Filling & Flavor Additions

If adding additional sauce pockets between layers, slightly cool but keep sauces pourable. Spoon thin ribbons (about 2–3 tbs each) of hot fudge, caramel or compote between layers before freezing to create swirl pockets. Work quickly to prevent ice cream melting.

Whipped Cream Frosting (Stabilized)

If using gelatin: sprinkle 1 tsp gelatin over 1 tbs cold water in a small bowl and let bloom for 5 minutes. Gently microwave or warm 5–8 seconds until dissolved and clear; do not boil. Let cool slightly but not set.

In a chilled mixing bowl, pour 3 cups cold heavy cream, add 6 tbs powdered sugar and 2 tsp vanilla extract. Begin whipping on medium speed until soft peaks form. With the mixer running, slowly add the dissolved gelatin (if using) and continue to whip to medium-firm peaks. Do not overbeat — frosting should be spreadable.

Remove the frozen cake from freezer and briefly let sit 2–4 minutes so top is slightly easier to spread. Use an offset spatula to apply a thin crumb coat of whipped cream over top and sides, then freeze 10–15 minutes to set. Apply a final thicker coat of whipped cream, smoothing as desired.

Decorations & Finishing

Press 0.5 cup mini chocolate chips or cookie crumbs around the bottom edge of the cake (optional). Scatter chocolate shavings and 2 cups sliced fresh strawberries or assorted berries on top. Add sprinkles if desired.

For clean slices, return the finished, decorated cake to the freezer for at least 4 hours (preferably overnight) to fully firm. When ready to serve, remove cake from freezer 8–12 minutes before slicing to allow slightly easier cutting. Run a sharp knife under hot water, dry it, and make smooth slices, wiping the blade between cuts.

Keep cake frozen until serving. Leftovers should be covered and stored in the freezer for up to 2 weeks for best texture.
