Prepare Dr Pepper Reduction
Reduce soda
Pour 1 cup (use extra if you prefer more syrup) of Dr Pepper into a small saucepan. Bring to a gentle boil over medium heat, then reduce to a simmer. Cook, stirring occasionally, until the liquid is reduced to about 1/4 cup and slightly syrupy (10–15 minutes). Watch carefully to prevent burning. Remove from heat and let cool to room temperature. This yields the 1/4 cup 'Dr Pepper (reduced to syrup)' used in the topping.
Make the Batter
In a medium bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt until evenly combined.
Make a well in the dry ingredients and pour in the wet mixture. Stir gently with a spatula until just combined and no large streaks of flour remain. Batter should be fairly loose and slightly fizzy from the soda; do not overmix.
Bake in the preheated oven for 22–28 minutes, or until the top is golden and a toothpick inserted into the center comes out with a few moist crumbs (not wet batter). Baking time varies by pan and oven; start checking at 22 minutes.
Whipped Dr Pepper Topping
If you haven't already reduced the soda, ensure you have 1/4 cup cooled Dr Pepper reduction. The reduction concentrates the flavor so the topping reads clearly as Dr Pepper.
Chill a medium mixing bowl and whisk (or beaters) in the refrigerator for 10 minutes to help the cream whip more easily (optional but helpful).
Pour the chilled heavy cream into the bowl. Add the powdered sugar and vanilla extract.
Using an electric hand mixer or stand mixer on medium-high speed, whip the cream until it forms soft peaks (a few seconds before stiff peaks).
Gently fold in the cooled Dr Pepper reduction with a spatula until streaks disappear and the whipped cream is uniform in color and flavor. Taste and adjust—if you want stronger soda flavor, fold in up to an additional tablespoon of reduction. Be careful not to overfold or let it deflate.
Spread or pipe the whipped Dr Pepper topping over the cooled cake. Chill the assembled cake in the refrigerator for 20–30 minutes to let the topping set before serving.
Garnish and Serve
If desired, sprinkle chopped toasted pecans around the edge, add maraschino cherries on top, and tuck a mint leaf beside each slice for color and contrast.
Slice with a sharp knife (wipe blade between cuts for cleaner slices). Serve slightly chilled or at room temperature. Store leftovers covered in the refrigerator for up to 3 days; the whipped topping will soften over time.
