Prepare dry ingredients
In a small bowl or measuring cup, whisk together 0.75 cups all-purpose flour, 0.5 tsp baking powder, 1 tbs granulated sugar, and 0.125 tsp fine salt until evenly combined and aerated.
Prepare wet ingredients
In a separate small bowl or another measuring cup, beat 1 large egg lightly. Add 0.25 cups milk, 1 tbs melted unsalted butter (cooled slightly so it doesn't cook the egg), and 0.25 tsp vanilla extract. Whisk until homogeneous.
Combine batter
Pour the wet mixture into the dry ingredients. Stir gently with a spatula or fork until just combined and there are no large streaks of flour. A few small lumps are fine — avoid overmixing to keep the texture tender. If batter is very thick, add up to 1 tablespoon (0.5 tbs) additional milk to reach a pourable but thick batter consistency.
Cook on stovetop (pancake-style)
If using a skillet: pour the batter into the preheated, greased pan and spread gently to an even round about 4–5 inches wide. If adding optional add-ins (2 tsp berries or chocolate chips), sprinkle them on top immediately. Cook on medium-low heat for 2–3 minutes until bubbles form on the surface edges and the bottom is golden-brown. Flip carefully with a spatula and cook 1–2 minutes more until both sides are golden and the center is set. Remove to a plate.
Bake in ramekin or oven (alternative)
If using a ramekin or small oven-safe dish: pour batter into the greased vessel, add optional add-ins on top, and bake at 350°F (175°C) for 10–14 minutes until the top is lightly golden and a toothpick inserted into the center comes out clean. Let rest 1 minute before removing.
Finish and serve
Dust the cooked item with 1 tsp powdered sugar if desired and serve warm. This single-serving item is best eaten immediately.
