Prepare Marshmallows

Toast large marshmallows

If you want a toasted-marshmallow flavor, skewer the 4 large marshmallows on a long fork or skewer and toast over a gas flame, stovetop burner, or with a kitchen torch until golden brown on all sides (about 10–20 seconds per side depending on heat). Allow to cool slightly. Alternatively, skip to using mini marshmallows for a chewy texture.

If using mini marshmallows in the float itself, measure 1 cup and set aside. Optionally briefly toast the mini marshmallows on a baking sheet under a broiler for 30–60 seconds watching closely for browning, then let cool.

Assemble Dr Pepper Float

Chill 2 tall glasses in the freezer for 5–10 minutes. Chilled glass helps keep foam under control and keeps the float colder longer.

Place 1/2 cup vanilla ice cream into each chilled glass (for 4 servings you will repeat; quantities below assume 4 served with 1/2 cup each). For this recipe quantity (serves 3–4) you can place 3 equal scoops across glasses as preferred.

Add about 2 tablespoons of mini marshmallows into each glass on top of and around the ice cream to incorporate marshmallow texture into the float.

If using vanilla extract, sprinkle about 1/8 teaspoon into each glass (this subtly enhances the ice cream's flavor without overpowering the Dr Pepper).

Slowly pour 3/4 cup (about 6 fl oz) Dr Pepper into each glass directly over the back of a spoon or down the side of the glass to minimize foam. Pour in two stages if necessary: add half the soda, wait 15–20 seconds for foam to settle, then top with remaining soda.

Use a long spoon to gently coax the ice cream so it floats and creates a creamy head. Do not vigorously stir—leave the layers for appearance.

Finish & Serve

Top each float with about 2 tablespoons whipped cream if desired.

Place a toasted large marshmallow on a skewer or cocktail pick and rest it across the rim of each glass, or gently nestle it into the whipped cream. Alternatively, arrange 1 maraschino cherry on top of each float for a classic look.

Sprinkle crushed graham crackers or cookie crumbs (about 1/2 tablespoon per glass) over the whipped cream for added texture and a s'mores hint.

Serve immediately with a straw and long spoon. Warn guests that the toasted marshmallow will be hot right after toasting; allow a minute to cool if needed.
