Make quick cherry syrup

Place the pitted cherries, sugar, water, and lemon juice in a small saucepan over medium heat. Stir to combine and bring to a gentle simmer. Cook 4–6 minutes, stirring occasionally, until cherries are softened and syrup has thickened slightly. Remove from heat and mash lightly with a fork for a chunky syrup or use an immersion blender for a smoother sauce. Let cool to room temperature (about 10 minutes). If you prefer a very smooth syrup, strain out solids through a fine-mesh sieve, pressing to extract liquid. Reserve.

Chill glass: Place a tall glass (12–16 oz) in the freezer for 5–10 minutes or fill with ice water for 2 minutes, then dump to ensure the float stays cold.

Add ice cream: Place 2 scoops of vanilla ice cream into the chilled glass, leaving space for the cola and foam.

Add cherry flavor: Drizzle 1 tablespoon of maraschino cherry juice over the ice cream. If using the optional cherry syrup, drizzle 1–2 teaspoons of syrup inside the glass or over the ice cream for deeper cherry flavor and a pretty swirl.

Pour cola: Slowly pour 6 fl oz of chilled cola down the side of the glass to minimize foam. Allow foam to settle briefly, then add the remaining cola to reach about 12 fl oz total. Pouring slowly helps control overflow.

Top with ice cream: Gently add the third scoop of vanilla ice cream on top, letting it sit in the cola and create a frothy crown.

Garnish: Add 1–2 maraschino cherries on top (reserve 1–3 cherries inside the float if you like them submerged). Add whipped cream if desired. For an extra-cold presentation, nestle some crushed ice around the outside of the glass (not inside the float).
