Chill glasses

Place glasses in the refrigerator or freezer for 5–10 minutes beforehand if you want the float to stay colder longer.

Have ice cream slightly softened (leave at room temperature 3–5 minutes) so scoops glide into the glass without shattering the foam.

Set out chosen sodas, ice cream flavors, add-ins, and garnishes so guests can build their own easily.

Assemble a Single Float (per glass)

Choose your soda base

Pour about 1 to 1 1/2 cups (8–12 fl oz) of your chosen soda or sparkling beverage into a chilled tall glass. Pour slowly down the side of the glass to reduce excessive foam.

Add flavorings (optional)

If using syrups (chocolate, caramel, strawberry) or a small splash of alcohol, add them to the soda now and gently stir once with a long spoon to integrate. Use about 1 teaspoon to 1 tablespoon of syrup or 1 teaspoon of alcohol per glass depending on desired intensity.

Add the ice cream

Using an ice cream scoop, gently place 2 level scoops of your selected ice cream or sorbet on top of the soda. If foam rises high, wait 10–20 seconds for it to settle before adding the second scoop.

Top and garnish

Add 1–2 tablespoons whipped cream if desired, sprinkle crushed cookies, mini chips or sprinkles, add a maraschino cherry, and finish with a mint sprig or citrus zest. If using soft-serve, swirl on top and proceed with garnishes.

Serve

Serve immediately with a long spoon and straw. Encourage stirring to combine ice cream and soda while sipping to maintain effervescence.

Tips & Variations

For a classic root beer float: use root beer + vanilla ice cream. For a Black Cow: chocolate ice cream + cola or root beer + chocolate syrup. For a fruity float: use sparkling water or ginger ale with sorbet and a spoonful of fruit puree.

If you prefer less foam, pour half the soda, add one scoop, let settle, then top with remaining soda and scoop(s).

To make multiple floats for a group, set up a 'float bar' with labeled sodas, ice cream tubs kept on ice or in a cooler, and bowls of add-ins/garnishes for self-service.

All optional alcoholic boosts are small—adjust or omit for non-alcoholic service. Stir gently to combine alcohol evenly.
