Prepare the Beans

Rinse the black beans under cold water and sort through them to remove any debris. Soak the beans in water overnight or for at least 6 hours.

Cook the Aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.

Combine Ingredients

Drain and rinse the soaked beans. Add the beans to the pot along with the water, bay leaf, cumin, salt, and black pepper.

Simmer the Beans

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 1 to 1.5 hours, or until the beans are tender.

Finish and Serve

Remove the bay leaf. Adjust seasoning with more salt and pepper if needed. Serve warm as a side dish.
