Prepare the Rice

Rinse the basmati rice under cold water until the water runs clear. This helps to remove excess starch.

Sauté Vegetables

In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic, diced carrot, and green bell pepper, cooking for another 3-4 minutes until softened.

Cook the Rice

Add the rinsed rice to the saucepan and stir to coat with the oil and vegetables. Add the cumin, coriander, salt, and black pepper. Stir in the chicken broth and bring to a boil.

Simmer

Once boiling, reduce the heat to low, cover, and let simmer for 15-18 minutes, or until the rice is cooked and the liquid has been absorbed.

Fluff and Finish

Remove the saucepan from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork, then stir in the chopped parsley and lemon juice before serving.
