Roast the Cauliflower

Preheat your wood-burning oven to a medium-high heat. Cut the cauliflower into florets and toss with olive oil, salt, and pepper. Spread the florets on a baking sheet and roast in the oven until golden and tender, about 25-30 minutes.

Blend the Cauliflower

Once the cauliflower is roasted, transfer it to a blender. Add the heavy cream, garlic cloves, and lime juice. Blend until smooth and creamy. Adjust seasoning with more salt and pepper if needed.

Prepare the Tortillas

While the cauliflower is roasting, prepare your corn tortillas using masa harina and water. Shape and cook them on a hot griddle or in a skillet until they are soft and pliable.

To assemble the tacos, spoon the creamy cauliflower into the warm corn tortillas. Garnish with chopped cilantro and any additional toppings you like.
