Make the Churro Dough

In a medium saucepan, combine the water, granulated sugar, salt, and vegetable oil over medium heat. Bring to a boil. Remove from heat and stir in the flour until smooth. Let the mixture cool for a few minutes.

Incorporate Eggs

Once the dough is slightly cool, beat in the eggs one at a time until fully incorporated. The dough should be smooth and thick.

Heat the Oil

In a large, deep skillet or pot, heat the vegetable oil to 350°F (175°C).

Pipe the Churros

Transfer the churro dough to a piping bag fitted with a star tip. Carefully pipe strips of dough into the hot oil, cutting them to your desired length. Fry until golden brown, about 2-3 minutes per side.

Drain and Coat

Remove the churros from the oil and drain on paper towels. In a bowl, mix together the powdered sugar and cinnamon, then roll the churros in the mixture to coat.
